Vegan Protein Granola Bars
For a nutritious and satisfying snack, these vegan protein granola bars will hit the spot. Packed with plant-based protein sources like seeds and plant-based protein powder, these granola bars are perfect for a quick energy boost or post-workout recovery. How to assemble the Vegan Protein Granola Bars:
Once you have made the vegan granola base, pour the mixture into the prepared pan and even out using a spatula.
Bake for 18-20 minutes or until golden. Allow to cool fully before making the chocolate top.
In a small microwaveable bowl, combine the chocolate melts and coconut oil. Microwave in 30 second bursts (mixing in-between) until fully melted and combined.
Pour over the cooled bar and evenly spread using a spatula. Refrigerate for 2-3 hours or until set.
Remove from the pan, slice into as many bars as you like and enjoy!
Baking Tips:
Vegan protein powder: The vanilla vegan protein powder I used is the same powder as the one I used in my Mini banana protein muffins.
Chocolate melts: The chocolate melts I used for this recipe are the Sweet William Dairy Free Mylk Choc Melts.
Press down firmly: Firmly press down the granola mixture into the pan using a spatula or the back of a spoon after you have poured it. This simple step is crucial as it will help bind all the ingredients together, resulting in non-crumbly granola bars.
