How to assemble the Vegan Protein Granola Bars:

  1. Once you have made the vegan granola base, pour the mixture into the prepared pan and even out using a spatula.

  2. Bake for 18-20 minutes or until golden. Allow to cool fully before making the chocolate top.

  3. In a small microwaveable bowl, combine the chocolate melts and coconut oil. Microwave in 30 second bursts (mixing in-between) until fully melted and combined.

  4. Pour over the cooled bar and evenly spread using a spatula. Refrigerate for 2-3 hours or until set.

  5. Remove from the pan, slice into as many bars as you like and enjoy!

  • Chocolate melts: The chocolate melts I used for this recipe are the Sweet William Dairy Free Mylk Choc Melts.

  • Press down firmly: Firmly press down the granola mixture into the pan using a spatula or the back of a spoon after you have poured it. This simple step is crucial as it will help bind all the ingredients together, resulting in non-crumbly granola bars.
