Baking Tips:
Marshmallows: If you are unable to find mini marshmallows at the store, a simple alternative is to cut your regular-sized marshmallows into smaller chunks. You can achieve this by using a pair of large scissors or a sharp knife to carefully slice them into smaller pieces.
Peanuts: You can use just normal peanuts; they don't have to be roasted or salted. It's entirely up to you and your preference when making this recipe. Personally, I find that the roasted/saltiness of the peanuts really complements the sweetness from the caramel in a delicious way.
Chocolate: You have the option to choose between milk chocolate, dark chocolate, or a combination of both for this recipe. Consider using chocolate melts or cooking chocolate; personally, I prefer the taste of cooking chocolate. Opting for cooking chocolate requires you to chop the bar into smaller pieces before microwaving to expedite the melting process.
Toppings: I suggest that after sprinkling the toppings over the rocky road, gently press down on each piece into the chocolate mixture. This method will enhance the adhesion of the toppings, preventing them from detaching when the rocky road is set and sliced.
